Ingredients
For the Base
- Jasmine rice
For the Stir Fry
- 2 chicken breasts, cut into cubes
- 3 jalapeños, sliced (use more or less depending on heat preference)
- 1 onion, sliced
- Fresh garlic, minced
- Avocado oil
- Salt
- Black pepper
- Garlic powder
- Soy sauce (or Cambodian seasoning sauce)
- Sweet soy sauce
- Oyster sauce
- Chicken powder
Instructions
1. Cook the Rice
- Prepare a pot of jasmine rice according to package directions. Set aside.
2. Prep the Ingredients
- Slice jalapeños, onion, and mince fresh garlic.
- Cut chicken breasts into cubes.
3. Make the Stir Fry
- Heat a wok or large pan over high heat and add avocado oil.
- Once hot, add sliced onions and sweat them with a pinch of salt.
- Add jalapeños and garlic; sauté until the garlic is lightly browned.
- Add soy sauce (or seasoning sauce) and stir.
- Add in the cubed chicken. Season with salt, garlic powder, and black pepper.
- Add chicken powder, more soy sauce, sweet soy sauce, and oyster sauce.
- Sauté until the chicken is cooked through and the sauce reaches your desired consistency.
4. Serve
- Let the stir fry cool for a minute.
- Spoon over a bowl of jasmine rice.
